Delta Restaurant, the only restaurant in Greece with two Michelin stars and a green Michelin star for sustainable gastronomy, will celebrate its three-year anniversary in July 2024. During these three years, it has already established itself as a pioneer in the Greek gastronomic scene.
Delta Restaurant: A sustainable fine dining destination in Athens
Delta derived its name from the 4th letter of the Greek alphabet. Delta restaurant serves modern Greek haute cuisine. It is located at the 5th floor of Stavros Niarchos Foundation Cultural Centre (SNFCC) and it started operating in July 2021.
Delta was created with the initiative and donation of the Stavros Niarchos Foundation (SNF) with the aim of becoming a gastronomic destination worthy of the high standards of the SNFCC, while showcasing Greek cuisine to the world.
With the principle of “no loss – no waste,” a sustainable operating model -that respects nature’s resources, while also raising awareness of the importance of sustainability in gastronomy -was adopted. Collaborations with small producers from all over the country supply the kitchen with authentic, rare ingredients, with an emphasis on organic products.
The impressive dining room and award-winning design
The impressive venue was designed by the award-winning architectural firm Kois Associated Architects. Drawing inspiration from modern Greek culture, the architectural design of the restaurant located in the building of the National Opera House, is in direct harmony with the design of the SNFCC and respects the vision of architect Renzo Piano.
It is worth mentioning that Delta was awarded the Restaurant & Bar Design Award 2022 in the category “Europe – In Another Space,” which includes dining spaces in Europe located in museums, airports, transportation hubs, anywhere other than hotels. This is the most significant and influential design competition for dining spaces worldwide.
The chefs
Head chef Georgios Papazacharias leads the R&D team, with previous experience at the 3-star Maaemo in Oslo and the restaurant Under in Norway. Another head chef is Thanos Feskos, formerly an Assistant Chef at the three Michelin-starred Geranium in Denmark.
The new menu
Just before completing its three years of operation in May 2024, Delta Restaurant radically renewed its menu with the goal of reaching new heights and perhaps earning a third star. The new menu combines cooking techniques from Spain and France, preparations and fermentations from Scandinavia, and ingredients from Greece. The menu focuses on avoiding food waste, utilizing every ingredient to the fullest, the farm-to-table philosophy, organic products, and fermentation.
The updated offerings maintain their enigmatic character, as well as the established Omnivore, Vegetarian, or Vegan orientation, depending on each guest’s preferences.
Wine cellar with over 1000 different wine labels
The ideal gastronomic pairing is ensured by the wine list of award-winning sommelier Tilemachos Papandreou, with over 1000 labels from international and Greek vineyards. At Delta Restaurant, you will find wines from iconic wineries, rare varieties, exclusive imports, aging cellars, and two wine rooms for a private, mystical experience.
A bar with a vision for sustainability
Within the restaurant, a bar concept has been created in exclusive collaboration with the award-winning Line Athens bar: With the central idea of Zero Waste, Line Athens’s cocktail menu is designed to “interact” with the Delta menu.
Additionally, the sculptural bar at Delta Restaurant is considered one of the largest bars on the planet and can accommodate up to 12 seated guests. The bar lounge with comfortable sofas and minimal lighting can host up to 50 people.
